Avista is a finalist in the ‘7 Wonders of New Cuisine’
Ceviche of red snapper with sweet potato and passion fruit, prepared by Chef João Luz from the Avista restaurant (Les Suites at The Cliff Bay. Madeira island) is one of the regional finalists in the Portuguese '7 Wonders of New Cuisine’ competition.
This dish, which is competing in the ‘Appetisers’ category, is based on traditional ingredients from the island of Madeira. They include red snapper caught off the coast of the island, which can weigh between 6 and 7 kilos, sweet potato which is accompanied by sugar cane honey, and passion fruit.
The regional qualifying rounds of the programme broadcast by RTP1 and RTP Internacional will begin on 12 July.
